Saturday night stay at home – quick & simple dinner for one!

I had been out heaps this week  so was looking forward to have a nice quiet night in and cook myself something fresh and light to at least create the illusion that summer is on its way.

So on the menu was:

To Start: Seared Tuna, with a mango, chilli & coriander salsa

The Serial Diner - Dinner for one-1-2

To make the Tuna dish you will need:

  • Piece of tuna
  • Black & White sesame seeds
  • 1/2 Avocado
  • 1/2 Mango
  • 1/2 cup cooked rice
  • Coriander
  • 1 Small red chilli
  • 1 table-spoon each rice wine vinegar, lime juice & soya sauce.

Coat Tuna in the sesame seeds, cook in hot pan with sesame oil for 1/2 to 1 minute per side, set aside while you prep the salsa.
Cut Mango into 1 cm squares, add to a bowl with the coriander and chilli.
Mix the Soya sauce, rice wine vinegar and lime juice together and pour over mango, chilli & coriander.
Put the rice in a bowl, cut the tuna and avocado into slices and place on top of rice. Then spoon the salsa around the tuna and avocado, pouring the remaining juices over the top. Sprinkle the remaining sesame seeds over the avocado and you are good to go.

To Follow: Strawberries and cream (special preparation)

To make the strawberries and cream you will need:

  • 1/2 punnet strawberries
  • 1/2 desert spoon icing sugar
  • 1/4 teaspoon of freeze-dried raspberry powder
  • zest and juice of 1/2 a lime
  • 1/4 cup cream
  • 2 teaspoons sugar
  • 1/8 teaspoon Ground vanilla pods (or essence)

Hull the strawberries and cut in 1/2 or 1/4 depending on the size
Mix icing sugar and raspberry power in a small bowl
Zest the lime but keep zest aside. squeeze the lime juice over the strawberries, then add the icing sugar mix and toss gently to coat, sprinkle the lime zest over the top and set aside to rest while you make the whipped cream
Pour cream into a bowl, add sugar and vanilla, whip with a whisk. I use a hand whisk to ensure I don’t over beat the cream. I prefer it only just holding its shape on the plate.

To Finish: Cosmopolitan cocktail

To make the cocktail you will need:

  • 1 nip Cointreau
  • 2 nips vodka
  • 4 nips cranberry juice ( I prefer pomegranate juice)
  • 1 nip lime juice
  •  ice cubes

Place all ingredients into a cocktail shaker, shake vigorously for 20 seconds, pour through a strainer into your favourite glass and you are good to go.

So there you have it a nice vibrant dinner for one.
